Hi again! I hope your week went well. I was able to hit all of my eating and exercise goals, so I’d say my week was pretty great!
Goals for this week
This week’s menu is a little sparse because of holidays. We had Easter dinner at my in-laws’ place, and then Jeff turns 35 on Wednesday! He requested Mac and Cheese with taco flavors for his birthday, so I’m going to try to make that work. I’ll give you the run-down in a minute. Then, we’re going to celebrate his bday in Vegas on Friday night, so I’m only really cooking three nights this week. Back to our regularly scheduled program next week. š
I didn’t track today, but I ate mindfully. We will have a few good days of eating this week, and then I plan on indulging in Vegas. No regrets. I work too hard to feel guilty for a night of fun. Next week’s menu will probably be lowish carb to detox a little, though. It’s all about balance!

Sunday: Easter dinner (didn’t cook)
Monday: BBQ Pulled Chicken (0SP), Easy Coleslaw (1 SP), broiche bun (5 SP), grilled corn (0 SP)

Tuesday: BBQ Chicken Pizza using my Lightened-Up Pizza Dough (3 SP a slice), side salad (2 SP)
For the pizza, I’ll use 1 1/2-2 cups of leftover chicken as the base. Top with 5 oz Trader Joe’s Lite Mozzarella cheese, shredded carrots, and diced red onion. Once cooked, I’ll drizzle the pizza with extra BBQ sauce and some cilantro. So good!!
Wednesday: Taco Mac and Cheese (6 SP), side salad (2 SP)
This one will be improvised since it is a special request from Jeff. I plan on using my One-Pot Mac and Cheese recipe and adding in 99% fate free ground turkey, seasoned with taco seasoning. I might also add in some diced peppers and onions. We’ll see. I’ll definitely post it if it’s a winner.
Thursday: Leftovers Buffet
Friday: Vegas!
