My weekly menu plan is the #1 way I stay one track with my point and stay on budget!
Sunday: Citrus Marinated Chicken (El Pollo Loco Copycat) (0-1 SP), Easiest Refried Beans (0 SP), green beans.
Monday: I’m making pasta (1 cup cooked whole wheat linguine for 5 SP) but adding in leftover chicken from Sunday (I’m counting as 0 SP because I’ll only use 1/2 cup) and some steamed broccoli. The I’ll toss all of that that with 1/3 cup of my Skinny Alfredo sauce (3 SP).
Tuesday: Black Bean and Avocado Tostadas (4 SP) using leftover beans from Sunday. I’ll eat 2 of them for 8 SP total.
Wednesday: I’m trying out homemade white pizza for the first time! I’ll use leftover Skinny Alfredo from Monday and my Lightened-Up Pizza Crust. I plan on sing 1/2 cup of the sauce for the entire pizza servng (14-inch, thin crust), along with some sauteed spinach. This should be 3 SP for each slice.
Thursday: Leftovers Buffet
Friday: Date Night at Home! Chicken Tikka Masala (4 SP), 1/2 cup white jasmine rice (3 SP), 1/2 garlic naan from Trader Joe’s frozen section (3 SP).
