Years ago, I ate a pasta dish very similar to this at one of our favorite Italian restaurants. Of course, it was full of butter and cream. I knew I could lighten it up, and thankfully I did because it's not on the menu any more. To be honest, I actually like this version better--the flavors are the same, but I don't get that heavy feeling after having a fat and carb bomb of a dinner.
