It’s that time again! We’re getting excited for our Super Bowl party, but I’m usually not so excited about how to keep on track with all of those dips, wings, and burgers around me. So much temptation.
This “holiday” is actually why I was inspired to create lighter comfort recipes. My only option to stay on track at most parties was a veggie tray, and that’s just not very exciting. My goal was to create recipes that I could take to parties with a variety of people and they all could eat my dishes, not even realizing they were consuming something healthier. Well, I’ve made most of these recipes for many years, and I haven’t had one complaint.
Whether you make one of these dishes to take to a potluck, or create an entire spread from this list for your own party (that’s my plan), you can guarantee that you’ll have a better chance of staying on track and mindful of your eating during one of the more caloric days of the year! And your friends/family will thank you.
Lightened-Up Spinach Artichoke Dip (2 SP for 1/3 cup)
Boneless Buffalo Wings (3 SP for 1/4 of the recipe)
Oven Fried Pickle Chips (3 SP for 1/3 of the recipe, about 2/3 of a cup)
Chinese-Style Egg Rolls (Air Fryer or Oven) (2 SP for 2, or 3 SP for 2)
Deviled Egg Potato Salad (3 SP for 1 cup)
Mexican Street Corn Pasta Salad (4 SP for 3/4 cup)
Shells and Cheese with Bacon and Broccoli (7 SP for 1 & 1/3 cup)
One-Pot Buffalo Chicken Mac and Cheese (6 SP for 1 heaping cup)
Jalapeno Popper Turkey Burgers (2 SP each)–FYI, I’ve also made these into sliders for a large party, and they came out to 1 SP each! Just half the burger portions so the recipe makes 8 servings. Use Hawaiian Rolls for the buns for extra points.
Chicken Bacon Ranch Burgers (2 SP each)–you can make these into sliders, too, for 1 SP each. See my description above.
