This hearty Slow Cooker beef stew is loaded with tender meat and perfectly seasoned vegetables. Easy comfort food at its finest!
I’m typing this up on the first cold(ish), rainy day of the fall, so it feels like kismet that I’m sharing this recipe with you. Talk about a dish that warms you up from the inside out!
Slow Cooker recipes are always welcome this time of year. There’s nothing better than coming home to a meal that has been cooking all day.
All this requires is some chopping and searing the beef to add an extra layer of flavor. You’ll just throw everything else into the slow cooker and let it do it’s thing! So easy for such a huge flavor payoff. Your house will smell amazing by the end of the day.
Can I skip searing the beef?
I know that sometimes the appeal of a slow cooker recipe is the ability to just mix everything together and let it cook. An extra step can be a little annoying. Please take that extra step, though! The flavor is much deeper when you get a dark sear on the beef.
If you want to save yourself some time, chop all of your veggies beforehand. Then, when you’re ready to cook, just sear the meat and throw everything else in.
At first, it will look like there isn’t enough liquid. Resist the temptation to add more! The veggies and meat will release their juices as the stew simmers. No one wants watery stew!
Can you Freeze SLow COoker Beef STew?
Yes! This recipe makes A LOT of food, and since I’m not cooking for a large family, I experimented with freezing the leftovers.
I suggest you freeze it in the 2-cup portions, so you can reheat each serving individually. You can do this on a stovetop or in the microwave.
The meat won’t hold its form and will shred into the stew, but it will still be delicious. The potatoes and carrots hold their form nicely.
If you’re adding peas, I would freeze the leftovers without the peas and add them in when you defrost.
Can you use an instant pot?
I’m sure you can, but I haven’t tested that out yet. The typical time adaptation for an 8 hour slow coo is 30 minutes on high in the Instant Pot, but I can’t vouch for that.
Next time I make this, I’ll use an Instant Pot and update you here. Let me know in the comments if you give that a shot before I do!
Can I leave the peas out of this slow cooker beef stew?
Of course! It’s your choice. I like the peas for the added color and flavor, but the stew is just as delicious without them.
If you want to add the peas but are going to have leftovers, you may want to hold off on the last step of the recipe. Just add a handful of peas to the bottom of your bowl and let them thaw that way.
Otherwise, when you might have mushy peas if you reheat leftovers.

Slow Cooker Beef Stew
Ingredients
- 2 pounds lean beef roast, cut into 1-inch chunks (top round, bottom round, or sirloin will work)
- 1 pound baby potatoes, halved
- 4 medium carrots, peeled and sliced into 1/2 inch pieces
- 1 large onion, diced
- 4 cloves garlic, minced
- 3 cups fat-free beef broth
- 3 tbsp tomato paste
- 1 tbsp Worcestershire suace
- 1 tbsp red wine vinegar
- 2 tsp dijon mustard
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 2 large bay leaves
- 3 tbsp cornstarch
- 1 cup frozen peas (optional)
- fresh parsley, for garnish (optional)
Instructions
- Season beef with salt and pepper to taste. Heat a large nonstick skillet on medium-high. Spritz with cooking spray, then sear beef until nicely browned, about 2-3 minutes. Set aside.
- In a 6-quart slow cooker, whisk together beef broth, tomato paste, Worcestershire sauce, vinegar, mustard, and all of the spices.
- Add beef, potatoes, carrots, onion, and garlic to the slow cooker. Mix with the seasoned broth to coat the veggies and beef. Add in the two bay leaves.
- Cover and cook on low or 7-8 hours, or on high for 3-4 hours–until the beef is tender and almost falling apart.
- In a small bowl, whisk together 3 tablespoons of cornstarch with 3 tablespoons of water to create a slurry. Slowly stir the mixture into the slow cooker.
- Cover and cook on high for another 10 minutes, or until thickened.
- Turn off slow cooker and mix in peas. Let stand for a minute or two, just until peas thaw. Garnish with parsley, if desired.

As a kid I used to eat the beef stew from a can. I remember loving beef stew. As an adult I tried the can stuff and couldn’t believe I used to like that. I was scared to try this one out but BOY OH BOY!!! Not only was this super easy to prep, it was HEAVENLY in taste for a cold rainy SoCal night. The hard part is smelling it cook all day since I work from home. I was so tempted to steal a taste before dinner. Thanks Geri for taking me back to my 8 year old days. I remember now why I love beef stew and so glad I graduated to fresh healthy ingredients.

I just made this tonight in the Instant Pot and it was great. Here’s what I changed:
I seared the beef on “saute” then removed it and added a bit (probably 1/4 cup) of red wine to deglaze. Then I added the beef broth, etc.
I cooked it on “Stew” setting for 35 minutes. This was perfect timing, the beef falls apart when you touch it with the spoon. I think the IP also locks in all the flavors.
I added only 2 T. of cornstarch in water at the end so it would keep plenty of liquid and be soupy.
It was a little heavy on the pepper for me, maybe I put too much pepper on the beef when I seasoned it to sear it. Next time I’ll skip that maybe. Otherwise it was delicious and very easy.

I personally am not a huge beef stew fan. I threw this onto my meal plan for the week because my husband loves a beef stew and with the temps falling… I figured I would oblige. This stew was OUT OF THIS WORLD. And that is coming from a person who doesn’t typically love beef stew?? It was so easy to make and so hearty and flavorful.

I made this in the Instant Pot last night. Did 35 min with 10 minute natural release. I added the peas after that and the cornstarch swirl at that time. PERFECT! Thank you for another amazing recipe!!

It freezes beautifully! The meat will cook more when you reheat and probably fall apart, but nothing wrong with that.

This was very very good, plus easy. I had some tough cuts of beef in freezer and decided to use them in this stew. They came out so tender my husband could cut the pieces with a spoon!
