Here’s a one-pot meal that comes together in 10 minutes and requires zero chopping or prepping. We all have nights when we don’t want to hover over a stove. This is my go-to when I’m in that kind of mood. I can just reach for things in my cupboard and freezer to create a meal that tastes like I’ve been cooking all day. There’s one secret ingredient that really makes this all come together…
Have you tried the Birds Eye and Zucchini and Lentil Pasta yet? If not, you can find it in the freezer section of your grocery store, next to the other frozen veggies. I was pleasantly surprised by the taste and texture on this plain version. I’ve tried some of the pre-sauced ones, and I’m not a fan. I’d rather use a quick homemade sauce that has much more flavor, like the one in this recipe. Another reason to love this product? It cooks up in the microwave in 3 minutes (no extra pans to clean!) and has half of the calories of regular pasta.
You can make this meal into two or 3 servings, depending on how hungry you are. 1/2 of the pan is 7 SP, and 1/3 of the pan is 4 SP. You choose!
Shrimp and Penne in Pink Sauce
Ingredients
- 1 bag Birds Eye Zucchini and Lentil Pasta, microwaved 30 seconds less than the package directions indicate
- 1/2-3/4 lb shrimp, peeled and deveined
- 1 cup canned tomato sauce
- 1/2 tsp each italian seasoning and garlic powder
- 1/2 cup jarred light alfredo sauce that scans at 2 SP (like Bertolli or Classico)
- 3 cups spinach (or add more if you like)
- seasoning salt to taste
- red pepper flakes to taste
Instructions
- Season shrimp with seasoning salt and red pepper flakes. In a large skillet, sear over medium-high heat until slightly cooked, about 30 seconds a side. Remove from skillet and set aside.
- In the same skillet, add both sauces and seasoning. Lower heat and simmer for 2-3 minutes. Adjust seasoning to taste.
- Add in cooked penne, shrimp, and spinach. Simmer for a minute or two until spinach wilts and pasta soaks up some of the sauce.
- Add some grated parmesan cheese on top if you like (extra points).
