If you want an easy and refreshing 0 SmartPoints meal for the summer, this salsa will be your lifesaver. You can take advantage of beautifully ripe summer fruit while creating an impressive meal that feels fancy, but only takes about 10 minutes to throw together. And since you don’t have to turn on the stove or oven, this really is the perfect dish for this time of year. Just grill up some lean protein and top it with this magic.
I’ve estimated this at 4 servings, but you could split it in two if you want more fruit, and it would still be 0 SP, as long as you serve with a protein like fish, shellfish, or chicken breasts. I paired mine with seared cod and it was heavenly! So light but satisfying. I cooked my cod in a medium-high skillet for about 3 minutes each side. I kept the seasoning simple with just some salt and pepper since the salsa has a lot of bold flavors.
A final note–be aware of your tolerance for spice. I used half of a jalapeno with the seeds in, and it was SPICY, but that’s how we like things around here. If you want a more mild salsa, take the seeds out of your jalapeno, or use a fresno chili, which is naturally milder. If you can’t stand heat at all, chop up about 1/4 of a large bell pepper. The salsa really needs some pepper in there for depth of flavor.
Watermelon and Pineapple Salsa
Ingredients
- 1 cup diced pineapple
- 1 cup diced watermelon
- 1/4 cup minced red onion
- 1/2 of a jalapeno, diced (can use fresno chili or 1/4 cup diced bell pepper for a milder salsa)
- juice of 1 lime
- 1/4 tsp each salt and pepper
Instructions
- Start cooking your protein while you prepare the ingredients for your salsa.
- Mix all ingredient in a bowl. Serve immediate on top of cooked protein, or refrigerate until ready to serve.
