Crumbly oatmeal streusel and naturally sweetened jam bars will satisfy your sweet tooth for breakfast or dessert! This one bowl bake is simply delicious!
Stop everything you’re doing now and make these! I rarely post dessert recipes because baking doesn’t come naturally to me. If I’m going to share a dessert, you better believe that I have practiced and refined it for probably way too long. That’s the perfectionist in me.
I’m lucky I didn’t just reach for some dark chocolate and call it a day. These oatmeal jam bars are the real deal and I promise you won’t be disappointed if you make them next time a craving strikes.
These bars may have helped me get over my fear of baking, haha. I love a good streusel dessert with some berries. There’s something about the way brown sugar and oatmeal come together in a crumbly streusel topping. It’s nostalgic and cozy.
If you haven’t tried it yet, I fell in love with my 0 SP Jam recipe when I was trying to cut back on artificial sweeteners and cane sugar. It takes only 15 minutes to make and is naturally low in sugar. Berries + streusel? Um, YES, please! It felt like a no-brainer to transform traditional streusel/crumble bars into a healthy sweet treat.
Voila!
I wanted these bars to be as fool-proof as possible. Good food doesn’t need to be stressful. Or messy. It doesn’t get much simpler than throwing (almost) all your ingredients in a bowl together, so that’s what we’re going to do here. Easy clean-up? Absolutely!
People will think you worked for hours to make these goodies. You don’t have to tell them they come together in about 30 minutes. That can be our secret.

Oatmeal Jam Bars
Ingredients
- 1 1/4 cup old fashioned oats
- 1 cup flour (all purpose or gluten free)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2/3 cup brown sugar
- 2 tbsp whipped or light butter, melted
- 1/4 cup applesauce
- 1 large egg
- cooking spray
- 1-1 1/2 cups 0 SP Jam or other unsweetened jam
Instructions
- Preheat oven to 350 degrees. Spray a 8-inch baking pan with cooking spray and set aside.
- In a large bowl, whisk together oats, flour, sugar, baking soda and salt.
- Add melted butter, applesauce, and egg to oat mixture and stir until combined.
- Press half of the oat mixture into the prepared baking pan. (I used waxed paper to press and spread the mixture into the pan, but you could just wet your hands with water).
- Spread jam in an even layer over the crust. Then, drop pieces of remaining oat mixture over the jam so it appears crumbly and gently pat it down.
- Bake for 20 to 25 minutes or until lightly browned. Cool before cutting into 12 rectangles.
