Sunday: Italian Meatloaf and Cauliflower Mash
- I’m going to use my BBQ Bacon Meatloaf recipe, but I’ll swap out the BBQ sauce and bacon for marinara. I’ll also add some Italian spices and parm cheese to the loaf. If all turns out well, I’ll post the updated recipe.
Monday: Broccoli “Cheese” Soup (1 SP). We’re still eating one plan-based meal a week, so I’m going to swap the cheese in this recipe for 1/2 cup nutritional yeast, making it only 1 SP a serving!
Tuesday: Jalapeno Popper Turkey Burgers (2 SP for the patty and 1 SP of avocado). I’m going to eat this as a lettuce wrap with a side salad.
Wednesday: Creamy Cajun Pasta (6 SP)
Thursday: Leftovers Buffet
Friday: Date night!
Saturday: Thai Chicken Pizza (2 SP a slice)
