I’m starting my week off by prepping a large batch of zero point foods (chicken and beans) so I can mix and match them with higher point toppings or combos for lunches (burritos, sandwiches, etc.)
The rest of the week is pretty standard for us. The only difference is that we’re trying to save money for a down payment on a house, so we’re cutting back on our date nights out. That means Fridays will now be something kinda splurgy but at home. We’ll still go out for a date night about once a month, but we were doing it every week for a while. Although I love doing that, it’s the easiest expense to cut down on when trying to save.

Sunday: Citrus-Marinated Chicken–El Pollo Copycat (0-1SP), Easiest Refried Black Beans–Instant Pot or Slow Cooker (0 SP)
Monday: Creamy Cajun Pasta (6 SP). I’m going to use all shrimp.
Tuesday: Crunchy Beef Tacos (2 SP each)
Wednesday: Cranberry Stuffing Topped Chicken (5 SP)
Thursday: Leftovers Buffet
Friday: Pizza Night! (10 SP for 3 slices) I’ll post my recipe for REAL pizza dough (no greek yogurt) later this week.
