I follow the WW Freestyle plan, so all of my recipes are calculated into SP (SmartPoints).
Sunday: One-Pot Baked Ziti (7 SP) with roasted zucchini
Monday: Marinated Steak Fajitas (3 SP) with Easiest Refried Beans (0 SP)
Tuesday: Copycat Panda Express Chow Mein (4 SP) with marinated chicken on top. I’ll marinate about 1.5 pounds cubed chicken in soy sauce, sesame oil, agave or honey, and Chinese Five-Spice for about an hour. If you’re interested in my marinade measurements, let me know–I’ll post it. 🙂
Wednesday: Spiced Turkey and Butternut Squash Skillet with Goat Cheese (2 SP). I haven’t let go of fall yet, folks.
Thursday: Heart-Shaped Personal Pepperoni Pizzas (10SP), using my Lightened-Up Pizza Crust. I have one dough in the freezer from the last time I made the recipe, so I’m going to cut that in half to make personalized pizzas for me and Jeff for V-day. My original recipe is for 2 12-inch pizza crusts, but you can get 4 individual crusts at 8 SP for the entire 1/4 of the dough. I’m going to add my 0 SP Pizza sauce, 1 SP worth of Trader Joe’s Lite Shredded Mozz, and 1 SP worth of turkey pepperoni. I’m so excited for this! Jeff can add whatever he wants to his. Lol.
Friday: Leftovers Buffet. Y’all know by now that I have to get in a leftovers day, which is usually Thursday, but I couldn’t do V-day like that. So Friday it is!
