These no-bake Berry Cheesecake Parfaits are tangy and slightly sweet –the perfect healthy sweet treat for the summer!
It has been sweltering hot around here lately, and it looks like it’s just going to get hotter in the coming months.
I wanted a fun dessert for 4th of July, but turning on an oven is just not doable! So I experimented with these no-bake parfaits.
They turned out so good! Tangy and slightly sweet cheesecake-flavored yogurt, layered with fresh berries and graham cracker crumbs. How could it NOT be good?
This recipe will be on the menu all summer long!
The parfaits are a great base for lots of iterations. Use whatever fruit you want! Of course, I’m trying to keep it festive with the red and blue, so strawberries and blueberries it is.
Not only that, the parfaits get better as they sit in the refrigerator. The graham crackers soften and the cheesecake-yogurt solidifies a bit.
So it’s actually better if you make them the day before. Make ahead, no-bake, AND easy?! The perfect summer dessert.
HOW TO MAKE BERRY CHEESECAKE PARFAITS
This really couldn’t be easier to put together. All it requires is a little bit of mixing and layering. Perfect to make with kids!
Start by mixing together the berries. You could even skip a step and use raspberries to avoid having to cut up the strawberries.
Next, mix together the cream cheese, Greek yogurt, vanilla, and sugar. I like to keep these just slightly sweet, so add more sugar if you want it sweeter.
Create three layers with the graham cracker crumbs, berry mixture, and cheesecake mixture. Then repeat the layers, cover, and refrigerate. That’s it!
8-ounce mason jars are perfect for this recipe! You can see all of the layers, and it stores easily. So cute, too!
When you’re ready to serve, just open the jars and add more berries and a sprinkle of graham crackers for garnish.
You could use standard 16-ounce mason if that’s what you have. Just add more berries to each layer to make the serving bigger without adding a lot of extra calories.
As is, this recipe has protein from the yogurt and nutrients from the berries, so it could be a great grab-and-go breakfast prep, too!

Berry Cheesecake Parfaits
Equipment
- 8 eight-ounce mason jars
Ingredients
- 6 ounces light cream cheese, softened
- 3 tablespoons sugar*
- 2 1/4 cups nonfat, plain Greek yogurt
- 2 teaspoons vanilla extract
- 1 cup graham crackers crumbs (made from about 5 full graham cracker sheets)
- 2 cup fresh strawberries, diced (plus more for garnish)
- 2 cups fresh blueberries (plus more for garnish)
- (optional) low-fat whipped cream (like Reddi Whip)
Instructions
- In a medium-sized bowl, whisk together softened cream cream cheese, sugar, and vanilla until smooth.
- Whisk yogurt into the cream cheese mixture until completely combined. Set aside.
- In a separate bowl, mix together the berries. Set aside.
ASSEMBLE THE PARFAITS
- Set out your mason jars (or any other containers around 8 ounces).
- In each jar, add 1 tablespoon on graham crumbs to the bottom.
- Add about 1/4 cup of mixed berries on top of the crumbs.
- Add 3 tablespoons of Greek yogurt/cream cheese mixture on top of the berries.
- Add another 1 tablespoon graham cracker crumbs to the top of the Greek yogurt/cream cheese mixture.
- Add another 1/4 cup of mixed berries on top of the crumbs.
- Add another 3 tablespoons of Greek yogurt/cream cheese mixture on top of the berries.
- Cover each container and refrigerate for at least an hour, but best overnight.
- When you're ready to serve, top with more berries and a light sprinkle of leftover graham cracker crumbs.
- (optional) You can add 1 tablespoon of low-fat whipped cream to the top of each jar without changing the points.

How long are they good for once made and in the fridge?

I’d say they’re best enjoyed within 24-48 hrs so the berries don’t get too mushy 🙂
