Jeff named this BBQ Bacon Meatloaf my most mic-drop-worthy recipe yet. Would you believe that this is 3 WW SmartPoints for one slice? We were in food-coma heaven. In case you’re wondering, the white parts in the loaf are the ground turkey that I didn’t incorporate all the way because I didn’t want to make the loaf too tough by overmixing.
BBQ Bacon Meatloaf
Ingredients
- 1 lb 96% fat free ground beef
- 1 lb 99% fat free ground turkey
- 1/2 cup panko
- 1 egg
- 2 tbsp worcestershire sauce
- 1 medium onion roughly chopped
- 1/2 cup baby carrots chopped
- 3 cloves garlic
- 1 tsp kosher salt
- freshly ground black pepper to taste
- 1 cup canned tomato sauce
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1/2 tsp each chili powder, garlic powder, and onion powder
- 6 strips center cut bacon that comes out to 1 SP for 2 slices (I use Aldi's Appleton Farms brand)
Instructions
- In a food processor, blend onions, carrots, and garlic until they form a rough paste. Add this into a large bowl with both meats, panko, worcestershire sauce, egg, salt, and pepper.
- In a smaller bowl, combine tomato sauce, brown sugar, vinegar, and seasonings. Add 3 TB of this sauce to the large bowl with your meats and veggies.
- Mix contents of large bowl until just combined and form into a loaf shape in a 13×9 pan. Your loaf should be about 12x5 inches.
- Brush loaf with about half of the remaining sauce, then top with raw bacon strips. I criss-crossed them, but you can layer however you like.
- Bake at 375 for 60 minutes, basting bacon with more sauce half way through. Broil for 30 seconds or so if you want more color on the bacon. It won't get super crispy, but the fat will render, and it will be very tender.
- Cut into 8 even slices.
