Hello, friends! For the month of October, I’m trying something a little different. For one meal a week, I’m going to make a vegan dish. I want to spark some creativity in the kitchen, and I’m interested in the benefits of eating a plant-based diet, so this should be pretty exciting! It’s important for me to throw some curve balls into my diet, not just to make things more interesting, but to jump start my metabolism. I’m excited to see what vegan recipes I end up loving!
Sunday: Skinnyish Dish’s Chicken con Broccoli (8 SP)
Monday: Vegan Pumpkin Alfredo Bake (recipe test, but guessing 8 SP) for #meatlessmonday and #veganoctober
Tuesday: Air fryer Beef Taquitos using the meat from my Crunchy Beef Tacos (1 SP each–will post if they work out!); grilled zucchini.
Wednesday: Mock Portillo’s Chopped Salad (recipe test, but guessing 6ish SP)
Thursday: Leftovers buffet
Friday: Date night!
Saturday: 2 ID BBQ Chicken Pizza using my 0 SP BBQ Sauce.
