- 3 pound pork loin, trimmed of visible fat
- 3/4 cup freshly squeezed orange juice (about 2-3 large oranges)
- 1 large onion, diced
- 1-2 jalapenos, diced
- 4 garlic cloves, minced
- 1 1/2 tsp kosher salt
- 2 tsp dried oregano
- 1 1/2 tsp cumin
- 1 1/2 tsp chili powder
- 1 tsp ground black pepper
Place all ingredients in slow cooker.
Cover and cook on low for 7-8 hours, or on high for 3-4 hours.
Meat is done when it pulls apart without resistance. Using two forks, pull the pork into strips. Toss with cooking liquid.
(Optional) Over high heat in a large nonstick skillet, spread pork in an even layer. Let one side crisp without touching it, about 2 minutes. Remove from pan and drizzle with cooking juices.
One serving is about 2/3 cup of meat.
