Light Pesto Sauce
Bright, complex, and packed with flavor! A lightened-up take on traditional pesto, using ingredients you probably already have on hand.

- 2 cups basil leaves, packed in tightly
- 1/2 cup + 2 tbsp vegetable stock (or chicken stock)
- 1/4 cup grated parmesan cheese
- 3 tbsp slivered almonds
- 3 medium garlic cloves (1 tbsp minced)
- 2 tbsp lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper

1 ounce of sauce is 1 SP (2 tbsp)
2 ounces of sauce is 2 SP (1/4 cup)
3 ounces of sauce is 3 SP (1/4 cup + 2 tbsp)
The entire recipe makes 10 ounces of sauce (about 1 1/4 cups) and is 11 SP total.
