In a small saucepan, bring apples, 1/2 tsp cinnamon, and 1/4 cup water to a simmer until water is evaporated.
Meanwhile, whisk together egg and apple sauce, then fold in flour and remaining 1/2 tsp cinnamon.
Using 1/4 cup each, cook pancakes over medium-low heat. Top with cooked apples.
Allow pancakes to rest for a few minutes; otherwise, they'll seem undercooked in the middle.
