- 3 cups diced yellow onions about 2-3 medium onions
- 1 tbsp light butter like Earth Balance Whipped
- 1 tsp kosher salt
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1 tsp soy sauce
- 4 ounces 1/3 less fat cream cheese
- 1 1/2 cups nonfat, plain Greek yogurt
- 1/2 cup light mayo
Melt the butter with some cooking spray in a pan over medium heat.
Add the onions, salt, pepper, and onion powder. Cook for 5 minutes, stirring often.
Reduce the heat to medium low and cook for 20 to 25 minutes, stirring occasionally. The onions should be sweet and golden. Add soy sauce in the last minute of cooking and mix in. Remove onions from stove and let cool for a few minutes.
Stir the cream cheese into the warm pan until mixed evenly with the onions.
Stir in yogurt and mayo until everything is evenly mixed.
Transfer to a bowl, cover, and refrigerate for AT LEAST AN HOUR. The dip won't taste like much unless you give the onions and spices time to mingle with the creamy base. I suggest you make this recipe the day before you serve it!
