Oatmeal Jam Bars

Ingredients

  • 1 1/4 cup old fashioned oats
  • 1 cup flour (all purpose or gluten free)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup brown sugar
  • 2 tbsp whipped or light butter, melted
  • 1/4 cup applesauce
  • 1 large egg
  • cooking spray
  • 1-1 1/2 cups 0 SP Jam or other unsweetened jam

Instructions

  • Preheat oven to 350 degrees. Spray a 8-inch baking pan with cooking spray and set aside.
  • In a large bowl, whisk together oats, flour, sugar, baking soda and salt.
  • Add melted butter, applesauce, and egg to oat mixture and stir until combined.
  • Press half of the oat mixture into the prepared baking pan. (I used waxed paper to press and spread the mixture into the pan, but you could just wet your hands with water). 
  • Spread jam in an even layer over the crust. Then, drop pieces of remaining oat mixture over the jam so it appears crumbly and gently pat it down.
  • Bake for 20 to 25 minutes or until lightly browned. Cool before cutting into 12 rectangles.
