Tater Tot Casserole

Ingredients

  • 16 ounces frozen tater tots
  • 12 oz ground turkey breakfast sausage
  • 6 large eggs
  • 3/4 cup almond milk
  • 1 1/2 cups reduced fat shredded cheddar cheese, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/2 tsp ground pepper
  • optional: 2 cups chopped veggies of choice, like bell pepper, mushrooms, broccoli, etc

Instructions

  • Preheat oven to 400 degrees. In a 13x9 baking dish, spread tater tots in a single layer. Bake for 10 minutes.
  • While tots are baking, cook your sausage in a large skillet. Drain on paper towels. 
  • In a large bowl, whisk together eggs, almond milk, 1 cup cheese, and seasoning. If you're using veggies, fold those into the egg mixture. 
  • Remove baking dish from the oven and pour egg mixture evenly over tots. Sprinkle top with sausage and remaining 1/2 cup cheese. 
  • Place back in the oven and cook for another 30-40 minutes, or until the center is just set when you pierce it with a knife.  Cut into 8 squares.
